FLV comes from the Adobe Flash era and Flash Player was discontinued at the end of 2020. WMV is Microsoft's Windows Media container, 3GP was defined by 3GPP for early mobile handsets, and AVI is Microsoft's 1992 interleave container with no standard way to carry soft subtitles.
Matroska & WebM Containers
MKV is an open container that can hold almost any codec plus multiple audio tracks, subtitles and chapters. WebM is a restricted subset of it built for the web, limited to VP8/VP9/AV1 video with Vorbis or Opus audio, which is why not everything in an MKV survives the move to WebM.
QuickTime (MOV) Conversions
MOV is Apple's QuickTime container and the format iPhones and Macs record to. It shares its underlying structure with MP4 — both derive from the ISO base media file format — so converting between the two is usually a container change rather than a re-encode.
Extract Audio from Video
These conversions discard the video stream and keep the soundtrack. When the target codec already matches what is inside the file the audio can be copied out without re-encoding; otherwise it is decoded and re-encoded, which costs a little quality.
